Joachim Hummel a7f9a51de4 refactor: rebrand from Secure Portal to SafeDocs Portal ...

Update all container names and image references:
- secure-portal-* → safedocs-portal-*
- Docker images now use safedocs-portal-backend/frontend
- MAIL_FROM_NAME default updated to "SafeDocs Portal"

This aligns with the complete rebranding of the product.
